Nancy Anderson’s MODIFIED Italian Pasta Salad

1 pound Barilla Plus Pasta
1/2 cup each (cooked and drained)(canned is fine too):
    kidney beans, garbanzo beans, white beans
1 cup (cooked and drained) black beans (canned is easiest)
4 oz. grated part-skim mozzarella
1 diced red bell pepper
1 diced green bell pepper
3 chopped tomatoes
1 (.7 oz) pkg. dry Italian salad dressing mix
1/2 cup extra virgin olive oil
1/4 c balsamic vinegar
2 T. dried oregano
1 T. grated Parmesan
1 T. dried parsley
Salt and pepper to taste

Cooking directions: Cook and drain pasta, al dente. Make dressing out of oil, vinegar, oregano. Parmesan, parsley, salt and pepper. Set aside. Combine all of the remaining ingredients (except the dried Italian dressing mix) in a large bowl. Combine with pasta and sprinkle with the dried Italian dressing mix. Cover and refrigerate for one hour. Pour dressing over salad just before serving.

Serving size:  about 1 1/4 cup

Calories per serving: 300
Fat grams per serving:  10
% Calories from fat:  30%
Fiber:  6 grams per serving
